Within five months of opening Umu, London’s first Kyoto restaurant, Head Chef Ichiro Kubota won a Michelin star for his meticulously prepared and artfully presented cuisine and one national newspaper editor declared that his toro sushi (a dish of minced tuna belly with sweet radish and a raw quail’s egg in a thin pastry case) was “the most sensational single thing I have ever tasted”.
